Hope you are enjoying the holiday season. We just got our first big snow here in Vermont yesterday and it is snowing outside my window as I write this.
As you might already know, Vermont is known for making heavenly maple syrup. As a holiday treat I wanted to share my favorite maple pie recipe.
This has become a tradition in my house. I plan on making it this afternoon for a holiday party.
It's called "Dog Team Maple Oatmeal Pie" named after an amazing local restaurant that unfortunately is no longer in business but was locally famous for their desserts.
Ingredients - 3 eggs, 2 tbsp. butter(mmmmm, butter..lol) 2/3 cup of oatmeal, 2/3 cup of coconut, 1/2 cup of crushed walnuts, 1 tsp Vanilla, 2 cups of Maple syrup(this is what makes it magic! :-) 1 prepared pie shell
Preheat oven to 350 degrees, Beat the eggs and butter together, Add in and combine the rest of the ingredients and stir well. Put mixture in the pie shell and bake for 45 - 60 minutes.
